Recipe for iftar
Gravy for mashed potatoes
2 tb Butter, 2 tb Flour, 2 c Milk, 2 tb Heavy cream, 1 t Salt, 3/4 ts, Black peppercorns, freshly -cracked. Directions: in a saucepan over medium-high heat, melt the butter. Whisk in the flour. Remove pan from the heat. Pour the milk into the pan whisking constantly. Return pan to the heat. Whisk until the gravy thickens. Whisk in the cream, salt, and pepper. Pour over potatoes, then sprinkle with cayenne pepper (that's the red pepper shown in the photo).
Chili's Mashed Potato with White Gravy
makes 4-6 servings
3 large potatoes
1/4 cup Butter
1/2 – 3/4 cup Milk
1 tsp Salt
1/4 Pepper
White gravy:
2 tbsp Butter
2 tbsp Flour
3/4 cup Fresh milk
3/4 cup Water
1/3 pc Knorr chicken bouillion
1/8 tsp Pepper
1/8 tsp Cayenne pepper
Clean potatoes with skin very well.
Boil potatoes until soft, about 20-30 minutes.
Mash in a bowl with the skin.
Mash in butter while potato is still hot.
Add milk and mix well.
Season with salt and pepper.
Prepare gravy:
Mix together milk and water in a pitcher.
Heat butter in pan, add flour and cook for 1 minute or until it sizzles.
Slowly add in the milk-water mixture while whisking continuously.
Season with chicken bouillion, pepper and cayenne pepper.
To serve:
Scoop mashed potato on a plate, top with gravy and add a pinch of cayenne pepper.
Monterey chicken
1 boneless skinless chicken breast
2 teaspoons barbecue sauce (she recommends Bull's Eye)
2 slices crisp bacon (should be very crispy)
1/4 cup monterey jack and cheddar cheese blend
Directions:
1 - Pound chicken breast until it is somewhat flattened, and season with salt and pepper.
2 - Spray Pam in a nonstick skillet, and cook chicken breast until it is done.
3 - Transfer to a serving plate.
4 - Top chicken breast with Barbeque sauce, bacon, and cheese.
5 - Broil chicken breast in the oven, or melt the cheese in a microwave.
6 - Sprinkle with a small amount of cold chopped tomatoes and chives.
